    <directions>Rinse watercrest with cold water.  If watercrest is freshly picked(apparently there is plenty of it along Sauble River), rinse thoroughly to wash off all the sand.  Slice pork then marinade with 1 teaspoon of sugar and 1/2 teaspoon of salt.  Peel carrots, then cut into 1" thick.

Put a pot of 8 to 10 oz of water on the stove.  Bring to boil in high heat.  Add pork.  When water begins to boil again, scoop the foam out(that's grease from the pork).  Add mandarin peel, figs, watercrest and carrot.  When soup starts boiling, turn heat down to medium heat and let it bubble for 30 minute.
